Whole Food, Plant Based Eating

If you are reading this, you probably share the same undying love for food that I do. Up until a year ago, I thought that my love for food was unrequited. I was devoted to food, but food kept stabbing me in the back. Food was making me fat and tired, and subsequently stressed and tired, and ultimately depressed and tired. Then I realized, it wasn’t food’s fault. It was mine. I hadn’t been choosing the right food. I was settling for convenience and fleeting satisfaction.

When I first decided to adopt a Whole Food, Plant Based (WFPB) diet, I thought I was setting myself up for failure. No Cheese? No Steak?! I’m from Philadelphia, that’s just plain sacrilegious! But it turned out,that it wasn’t difficult at all to maintain.  I started to feel better so quickly I couldn’t believe it. My energy levels were up, I was running faster and my weight was finally not a cause of stress in my life.  Probably the most difficult part to believe is that I didn’t crave meat or dairy anymore.  My food cravings completely changed in general.

If you havent heard about WFPB nutrition, I highly recommend reading The China Study by Colin Campbell. The science behind this nutrition focused diet is astounding.

So that’s a brief history of “why I eat what I eat.”  I hope you enjoy my recipes and find them helpful for whatever your personal diet and nutrition needs are!
